Ingredients:
3 cups sugar |
1 cup shortening |
3 large eggs |
2 cups mashed cooked pumpkin |
3 cups all-purpose flour |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
1/4 teaspoon ground cinnamon |
1/4 teaspoon ground cloves |
1/4 teaspoon ground allspice |
1/4 teaspoon ground nutmeg |
1 teaspoon vanilla extract |
1 cup chopped pecans |
Directions:
1. Beat sugar and shortening at medium speed with an electric mixer until creamy. Add eggs and pumpkin, beating until blended. Combine flour and next 8 ingredients; gradually add to pumpkin mixture, beating until blended. Stir in pecans. Pour into a greased and floured 10-inch tube pan. 2. Bake at 350° for 10 minutes. Reduce temperature to 300°; bake 1 hour and 20 minutes. |
