This came from out local newspaper. Ingredients:
1 1/2 cups brown sugar, packed |
1/2 cup shortening |
2 eggs |
16 ounces pumpkin |
2 3/4 cups flour |
1 tablespoon baking powder |
1 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1/4 teaspoon ginger |
1/2 teaspoon salt |
1 cup raisins |
Directions:
1. Preheat oven to 400 degrees. Mix sugar, shortening, eggs and pumpkin throughly in a large bowl. Sift dry ingredients and add to pumpkin mixture. Blend all well and add raisins. Pour batter into springform pan lightly sprayed with cooking oil. 2. Bake 35 minutes or until the center springs back and edges begin to pull away from pan. Remove from oven and cool before unmolding. |
