This is awesome over pancakes. Ingredients:
1 (15 oz) can of 100% pure pumpkin puree |
1 c. of applesauce |
1/3 c.of packed light brown sugar |
3/4 tsp. of ground cinnamon |
1/4 tsp. of ground ginger |
2 tbsp. of fresh lemon juice |
Directions:
1. First take a small sauce pan, combine pumpkin, applesauce, sugar, cinnamon and then ginger. 2. Then bring this to a boil; reduce flame to low and simmer, uncovered, stirring often to prevent scorching, approx. 45 min. 3. or until mixture becomes very thick. 4. Now stir in lemon juice. 5. You want to let this cool, then spoon into tight-sealing container and refrigerate. 6. Now: this will keep in the refrigerator up to 2 weeks. |
