Pumpkin Bread With Grand Marnier Glaze |

Yummy and Rich! These loaves make really great Christmas gifts! The original recipe is by Judie Dresser, found in a fundraising cookbook La Jolla Cooks by La Jolla Country Day School. The original had nuts, but I can't eat them. It called for 4 cups shelled walnuts, chopped. Ingredients:
2 cups pumpkin puree |
4 eggs |
1 cup canola oil (or vegetable oil) |
1 cup water |
3 cups sugar |
3 1/3 cups flour |
2 teaspoons salt |
2 teaspoons baking soda |
1/2 teaspoon baking powder |
1 teaspoon ground cloves |
1 teaspoon cinnamon |
1 teaspoon ground nutmeg |
1 teaspoon allspice |
2 cups powdered sugar |
1/4 cup grand marnier |
Directions:
1. Preheat oven to 325. 2. Combine pumpkin, eggs, oil, water and sugar. Set aside. 3. Mix together flour, salt, soda, baking powder and spices. 4. Add to pumpkin mixture. 5. Stir in nuts. 6. Pour into THREE greased loaf pans. 7. Bake for one hour and 10 minutes or until toothpick inserted in center comes out clean. 8. Partially cool, then transfer to cooling rack. 9. Mix powdered sugar with Grand Marnier. Drizzle over tops of loaves. |
