This is my mother-in-law's recipe with alterations for healthy eating.
Ingredients:
1 1/2 cups wheat flour
1 1/2 cups all-purpose flour
2 teaspoons baking soda
1 tablespoon cinnamon
1 teaspoon nutmeg
1 1/2 cups sugar
1 1/2 cups splenda granular (sugar substitute)
1 cup egg beaters egg substitute
1 cup plain fat-free yogurt
2 cups canned pumpkin
2/3 cup water
Directions:
1. Sift Dry ingredients together, including sugar and splenda.
2. Add wet ingredients to the dry mixture; mix until blended.
3. Makes 3 big loaves, 4 medium, 6 small, or 2 large and 1 Med.
