1-1/2 cups dark brown sugar (can use light brown) |
1 stick unsalted butter, softened |
2 large eggs |
1 cup canned pumpkin |
1-1/2 cups all purpose flour |
1 teaspoon baking soda |
1/2 teaspoon salt |
1-1/2 teaspoons cinnamon |
1 teaspoon ginger |
1 teaspoon pumpkin pie spice |
1/3 cup buttermilk |
glaze |
3 tablespoons butter, melted |
about 1 cup powdered sugar |
a little orange juice |
Directions:
1. In bowl, cream sugar and butter (can be mixed by hand) 2. Add eggs, one at a time, beating after each addition 3. In another bowl, whisk together dry ingredients 4. Add buttermilk with flour mixture alternately, starting with buttermilk 5. When blended, pour into a greased, floured loaf pan 6. Cook at 350 degrees for about 45 minutes, or until toothpick inserted in the middle, comes out clean 7. Cool for about 10 minutes in pan 8. Turn out, cool until just warm 9. Spread glaze over entire loaf 10. GLAZE 11. In bowl, blend until smooth, melted butter, powdered sugar, just enough orange juice to make a glaze. May add freshly grated orange rind |
