Mother's version that delights us every Thanksgiving. Ingredients:
4 eggs |
1 (1 cup) oil |
2/3 cup water |
1 (16 ounce) can pumpkin |
3 1/2 cups flour |
3 cups sugar |
2 teaspoons baking soda |
1 1/2 teaspoons salt |
1 teaspoon cinnamon |
Directions:
1. Preheat oven to 350°F. 2. Mix eggs, oil, water, and pumpkin. 3. Add sugar. 4. Gradually add in mixture of flour, baking soda, salt, and cinnamon. 5. Grease 3 loaf pans and fill halfway with batter. 6. Bake all loaves simultaneously for 1 hour. 7. Cool. 8. Bread freezes well. |
