Deliciously moist, pumpkin and spice. Makes 2 loaves so you may freeze or share one. Fruit and nuts are optional. Serve with cream cheese. Ingredients:
3 c sugar |
4 eggs |
1/2 tsp baking powder |
2 tsp baking soda |
1-1/2 tsp salt |
1 tsp cloves |
1 tsp cinnamon |
1 tsp nutmeg |
1 c oil |
2/3 c water |
3-1/2 c flour |
1 15 ounce can of pure pumpkin (or squash), not pie filling |
optional |
1/2 c chopped walnuts |
1-1/2 sm boxes of dates, chopped or |
1-1/2 c raisins, plumped in warm water |
Directions:
1. Add ingredients in given order 2. Bake 1 hr 25 minutes at 325 in UNGREASED, UNFLOURED baking tins 3. Cool 10 to 15 minutes, run knife around edges, tap bottom of pan if necessary to remove. 4. Cool completely before wrapping. |
