Yummy, moist snack bread best served with cream cheese spread. Ingredients:
16 oz can pumpkin |
3 cups sugar |
1 cup oil |
2/3 cup water |
4 eggs |
3 1/2 cups flour |
2 teaspoons baking soda |
1 1/2 teaspoon salt |
1 teaspoon cinnamon |
1 teaspoon nutmeg |
1/2 teaspoon ginger |
Directions:
1. Preheat oven to 350. 2. Grease the bottoms and sides of two loaf pans, set aside. 3. In a large bowl, blend first five ingredients at medium speed for one minute. 4. Add remaining igredients and blend on low speed until moistened, then beat one minute at medium speed. 5. Pour batter into prepared pans and beat for 60-75 minutes. 6. Cool 5 minutes then remove from pans. 7. For cream cheese spread, beat 8 oz light cream cheese and 1/4 cup light butter 8. Slowly add 3/4 to 1 cup confectioner's sugar until smooth. |
