This is one my Mom has made for many years at Thanksgiving. I love a slice just with butter on it. YUM! I use the small loaf pans and give them to friend's for the holidays. (this recipe would fill 6 of the small loaf pans and the cooking times would depend on the size of the loaves) Ingredients:
3-1/3 cups flour |
1 tsp. cinnamon |
1 tsp. nutmeg |
2 tsp baking soda |
1-1/2 tsp. salt |
3 cups sugar |
1 cup crisco oil |
4 eggs |
2/3 cup water |
2 cups (1 15oz can) pumpkin |
Directions:
1. Preheat oven to 350 degrees. 2. In a large mixing bowl, sift the dry ingredients. 3. Make a well & add the oil, stirring while pouring. 4. In a small bowl mix the water & eggs, then add to the large bowl. 5. Add the pumpkin & stir until smooth. 6. Pour into desired size loaf pans that have been sprayed with non-stick cooking spray. 7. Bake at 350 degrees 25 minutes to 1 hour, depends on the size of the loaves and oven or until a toothpick inserted near the center comes out clean. 8. (I will use 6 small pans, and they usually bakes for 30 minutes) |
