My grandmother gave me her old cookbook from the 40's and in it are amazing numbers of newspaper clippings. This is a recipe from a newspaper clipping with no idea where or when it was printed. I have used this for over 15 years and have found that nuts, dates, raisins etc can be added at the end for a new taste. Also can use 2 teaspoons pumpkin Pie seasoning to replace the cinnamon and nutmeg. A dash of cloves also gives it a touch of difference. Ingredients:
3 1/2 cups flour |
3 cups sugar |
2 cups pumpkin, a 16 oz can |
1 cup oil |
2/3 cup water |
4 eggs |
2 teaspoons baking soda |
1 1/2 teaspoons salt |
1 teaspoon nutmeg |
1 teaspoon cinnamon |
Directions:
1. Heat oven to 350 and non-stick spray 4 one pound loaf pans, or 1 9x13 pan. 2. Combine all ingredients and mix until well blended. 3. pour batter into pans and bake for about 1 hour. |
