Low fat, high fiber version of Mom's pumpkin bread, yummy! Ingredients:
3 1/2 cups whole wheat flour |
2 teaspoons baking soda |
1 1/2 teaspoons salt |
2 cups sugar |
1 cup water |
1 cup egg beaters |
2 cups canned pumpkin |
1 cup unsweetened applesauce |
1 t cloves |
1 t allspice |
1 t nutmeg |
1/2 t ground ginger |
2 t cinnamon |
Directions:
1. Preheat oven to 350 F 2. Spray two standard loaf pans with nonstick cooking spray. 3. Mix all dry, then all wet ingredients. Mix until well combined. 4. Bake at 350 F for about an hour 5. Makes 2 standard loaves of pumpkin bread |
