Ingredients:
1 1/2 cups flour
1/2 teaspoon salt
1 cup sugar
1 teaspoon baking soda
1 cup canned pumpkin puree
1/2 cup olive oil
2 eggs, beaten
1/4 cup water
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon allspice
1/2 cup chopped walnuts (optional)
Directions:
1. Preheat oven to 350-degrees F and grease a 9x5x3 inch loaf pan.
2. Stir together flour, salt, sugar, and baking soda.
3. In a separate bowl, mix the pumpkin, oil, eggs, water, and spices together, then combine with the dry ingredients, until just combined. If using walnuts, gently fold inches
4. Pour mixture into loaf pan and bake 50-60 minutes until a toothpick poked in the center comes out clean.
5. Turn out of the pan and let cool on a rack. Makes one loaf.
