This is an adaption of a pumpkin bread recipe I got from a cook book that is a collection of recipes from the employees at the Das Dutchman Essenhaus which is in Middlebury, IN; not too far from where I grew up. Ingredients:
3 1/3 cups flour |
2 2/3 cups sugar |
2 teaspoons baking soda |
1/2 teaspoon baking powder |
1 lb pumpkin puree |
4 eggs |
2/3 cup water |
2/3 cup salted butter, softened |
1 teaspoon vanilla |
1 tablespoon light molasses |
2 teaspoons cinnamon |
1 teaspoon nutmeg |
1 1/3 pecans, chopped |
Directions:
1. Sift together dry ingredients and beat together with remaining ingredients untill batter is smooth. 2. Pour batter into 2 well greased loaf pans. 3. Bake at 350°F for 65 minutes. |
