This is a really tasty recipe. It makes two loaves. It is a good way to use up pumpkin if you have some baking ones around. Ingredients:
1 (15 ounce) can pumpkin puree (about 2 cups) or 1 (15 ounce) can pumpkin puree (about 2 cups) |
1 cup vegetable oil |
4 eggs |
3 1/2 cups all-purpose flour |
3 cups white sugar |
1 1/2 teaspoons baking soda |
1 1/2 teaspoons salt |
1 1/2 teaspoons ground allspice |
1 1/2 teaspoons ground nutmeg |
2 teaspoons ground cinnamon |
1/2 cup chopped walnuts |
1 teaspoon baking powder |
Directions:
1. Preheat oven to 300 degrees. 2. Combine pumpkin, oil and eggs. 3. Sift together dry ingredients. 4. Combine the two mixtures, blending thoroughly. 5. Pour into 2 greased 9 x 5 x 3 inch loaf pans and bake for 1 hour. |
