From my collection of handwritten recipes. Makes 3 loaves. Ingredients:
2 1/2 cups unsifted flour |
1 1/2 teaspoons baking soda |
2 teaspoons cinnamon |
1/2 teaspoon baking powder |
1/2 teaspoon salt |
1/4 teaspoon ginger |
1/4 teaspoon clove |
2 cups sugar |
1/2 cup margarine, softened |
1 1/2 cups pumpkin |
1/2 cup water |
3 eggs |
1 cup chopped walnuts |
1/2 cup raisins |
Directions:
1. Preheat oven to 350*. Grease 3 8 x 4 x 2 1/2 loaf pans, set aside. 2. Combine flour, soda, cinnamon, baking powder, salt, ginger, cloves; set aside. In a large bowl, cream sugar and margarine until light and fluffy. Add pumpkin, water,and eggs; mix well. Stir in flour mixture until well blended. Fold in nuts and raisins. Pour equal amounts into prepared pans. Bake until a cake-teaster inserted in the center comes out clean, 35-40 minutes. Cool in pans for 10 minutes. Loosen with a metal spatula; turn onto wire racks to cool. Serve warm. |
