I got this recipe from my friend Annmarie. It's excellent for holiday gift-giving! You can also make it into muffins instead of loaves. The muffins will take about 35-40 minutes to bake. Ingredients:
1 (15 ounce) can pumpkin |
4 eggs |
1/2 cup vegetable oil |
1/2 cup applesauce |
2 cups sugar |
3 1/2 cups flour |
2 teaspoons baking soda |
1 1/2 teaspoons salt |
1 teaspoon cinnamon |
vanilla extract |
1/4 teaspoon pumpkin spice |
1 cup mini chocolate chip |
1 teaspoon nutmeg |
1/4 teaspoon ginger |
Directions:
1. Preheat oven to 350 degrees. Grease and flour (7 x 3 ) loaf pans. 2. In large bowl, mix together pumpkin, eggs, applesauce, oil, sugar until well blended. 3. In separate bowl, mix together flour, baking soda, salt, and spices. 4. Stir dry ingredients into the pumpkin mixture until just blended. 5. Fold in mini chocolate chips and vanilla extract. 6. Pour into greased loaf pans (or muffin tins, if you prefer). 7. Bake for about an hour or until a toothpick tests clean. |
