A quick, easy pumpkin bread Ingredients:
3 cups flour (i use 1 cup whole wheat pastry, 2 cups white all purpose) |
1 cup white sugar |
1 cup brown sugar |
3 teaspoons baking soda |
1 teaspoon salt |
1/2 cup sour cream |
2 cups pumpkin puree |
4 eggs |
1/2 cup water |
1 cup vegetable oil |
1 teaspoon ground nutmeg |
1/2 teaspoon ground cloves |
2 teaspoons cinnamon |
1 cup crushed walnuts |
Directions:
1. Preheat oven to 350 degrees, and oil either one large bread pan or two smaller ones. 2. Combine dry ingredients except spices in large bowl. Then, blend remaining ingredients, except nuts, in separate bowl. Combine wet mixture with dry mixture, but don't over mix, or the bread will be tough. Some lumps are to be expected. Pour or spoon into bread pans. Bake between one hour, twenty minutes, and one and a half hours, until a skewer sunk into the loaf's center comes out clean. |
