This was my Aunt Janet's pumpkin bread. I like it because it is simple to make, doesn't require a bunch of ingredients that I don't always keep on hand and is sweet enough it doesn't need an icing or glaze. Ingredients:
5 cups flour |
3 teaspoons baking soda |
2 1/4 teaspoons salt |
1 1/2 teaspoons cinnamon |
1 1/2 teaspoons nutmeg |
1 1/2 cups oil |
6 eggs, beaten |
1 cup water |
3 cups pumpkin |
4 1/2 cups sugar |
Directions:
1. Mix all ingredients together. Pour into buttered loaf pans. Bake at 350 for 40-60 minutes. 2. Note: 3 Cups of pumpkin = 1 large can of pumpkin. 3. I like to use 4 C unbleached all purpose flour and 1 C whole wheat flour. It just makes it a little bit healthier and doesn't change the texture of the bread. I always use a small portion of whole wheat flour in all of my baking. |
