This is an old recipe from my mom who lived in New England. It can be a breakfast food or a nice lunch, served with some cream cheese on top. Or, you can do as I do....eat it anytime!!! Ingredients:
1 2/3 cups flour |
1/4 teaspoon baking powder |
1 teaspoon baking soda |
3/4 teaspoon salt |
1/2 teaspoon cinnamon |
1 1/4 cups sugar |
1/2 cup oil |
1/2 cup water |
1 cup pumpkin |
2 eggs |
1 cup raisins |
1 cup chopped nuts (optional) |
Directions:
1. Heat oven to 350 degrees. 2. Grease two coffee cans. 3. Blend all ingredients together (I put everything in food processor) Pour equal amounts into each coffee can and bake for 1 hr and 15 min. |
