This is pumpkin pie in bread form! Very popular in my house during the fall holidays. This is a recipe that I got from my home ec. teacher years ago (don't know where she got it). I usually double it for 2 loaves. Ingredients:
1 cup canned pumpkin |
6 tablespoons butter, soft |
1 egg |
1 cup sugar |
1 cup flour |
1/4 teaspoon salt |
1/4 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1/4 teaspoon clove |
Directions:
1. Combine pumpkin, butter, egg and sugar with electric mixer. 2. Combine dry ingredients in a separate bowl. 3. Gradually mix dry ingredients into pumpkin mix. 4. Pour into a greased loaf pan. 5. Bake at 350* F. |
