This is a recipe that my BIL loves, so I thought I would share it with you. Although I myself am not a lover of pumpkin bread, hopefully if you are you will find this to your liking. :) Ingredients:
3 1/2 cups all-purpose flour |
2 teaspoons baking soda |
1 teaspoon salt |
3 cups sugar |
1 teaspoon ground nutmeg |
1 teaspoon ground cinnamon |
4 eggs, slightly beaten |
3/4 cup water |
1 cup salad oil |
2 cups canned pumpkin |
3/4 cup chopped walnuts |
1/2 cup golden raisin |
Directions:
1. Mix first 6 ingredients in a large bowl. 2. In a second bowl, combine eggs, water, salad oil and pumpkin. 3. Add the pumpkin mixture to the dry ingredients in the first bowl and mix just until well blended. 4. Fold in nuts, and raisins. 5. Mound batter into 2 greased and floured loaf pans. 6. Bake at 350 degrees for 1 hour (or until toothpick comes out clean when inserted into center of loaf). 7. Cool on a wire rack. |
