Ingredients:
1 cup flour |
2 tablespoons vegetable oil |
1/2 cup natural bran |
1/2 cup pumpkin, canned or cooked |
1 tablespoon sugar |
1 egg |
2 teaspoons baking powder |
3/4 cup orange juice |
1/2 teaspoon baking soda |
1/3 cup raisins |
1/2 teaspoon ground cinnamon |
1 tablespoon wheat germ |
Directions:
1. Combine all the ingredients, except the wheat germ, in a mixing bowl. 2. Stir to blend. 3. Spoon into lightly oiled muffin tins (or paper baking cups sprayed with non-stick spray, my choice.) Sprinkle on the wheat germ. 4. Bake in a 400 degree oven for 10 to 15 minutes or until lightly browned. |
