Muffin, high fibre Ingredients:
120 g cups all-bran, extra fibre |
245 ml buttermilk, low fat |
200 g pumpkin |
2 tsp pumpkin pie spice |
1 egg |
20 g brown sugar |
80 g oat bran |
1 tbsp baking powder |
1 tsp baking soda |
1 tsp vanilla |
1 tsp salt |
Directions:
1. Mix together: all bran and buttermilk and set aside for a few minutes. 2. Combine pumpkin, egg, pumpkin pie spice and brown sugar. 3. Add together oatbran, salt, baking powder and 4. add to pumpkin mixture. 5. Add this to the all bran mix. 6. Spray muffin tins with nonstick spray. 7. Bake at 350 degrees for 15-20 minutes or until toothpick inserted in the center comes out clean. 8. Cool for 5 minutes. |
