Pumpkin Black Bean Soup With Curry |

I love this soup! You wouldn't think that these ingredients go together until you try it! It does not have to be as spicy just put half the spices in! Ingredients:
2 cans pumpkin puree (no added flavors) |
3 cans vegetable broth |
1 can black beans |
1 can diced tomatoes |
1 yellow onion chopped |
1 cup of whipping cream |
1 tablespoon curry powder |
1 1/2 teaspoons ground cumin |
1/2 teaspoon cayenne pepper |
1 teaspoon of allspice |
1 tablespoon olive oil |
chives to garnish |
Directions:
1. Heat a soup pot over medium heat. Add oil. When oil is hot, add onion. Saute onions 5 minutes. Add broth, tomatoes, black beans and pumpkin puree. Stir to combine ingredients and bring soup to a boil. Reduce heat to medium low and stir in cream, curry, cumin, cayenne, all spice, and salt to taste. Simmer 5 minutes, adjust seasonings and serve garnished with chopped chives. |
