Pumpkin Bars With Cream Cheese Frosting |

A very easy and festive snack. Ingredients:
2 cups sugar |
16 ounces pumpkin, canned or fresh, pureed |
2 cups bisquick |
1/2 cup raisins (optional) |
1/2 cup oil |
4 eggs, beaten |
2 tablespoons cinnamon |
3 ounces cream cheese, softened |
1/3 cup butter |
2 cups powdered sugar, sifted |
1 tablespoon milk |
1 tablespoon vanilla |
Directions:
1. Preheat oven to 350 degrees. 2. Grease Jelly roll pan. 3. Beat sugar, oil, pumpkin and eggs on medium speed in mixer for 1 minute. 4. Stir in Bisquick, cinnamon and raisins. 5. Pour into prepared pan. 6. Bake until tooothpick inserted in center comes out clean, about 25-30 minutes. 7. Cool, frost, and cut into bars. 8. Cream cheese frosting: Beat cream cheese, butter, milk and vanilla until creamy. 9. Stir in powdered sugar. |
