Pumpkin Bars With Cream Cheese Frosting |

Another holiday recipe my Mom has been making for years. Really like the cream cheese frosting on it. Ingredients:

2 cups sugar |
2 cups flour |
4 eggs |
2 tbsp. baking powder |
1 tsp. baking soda |
1/2 tsp. salt |
1-1/2 tsp. cinnamon |
1 cup mazola oil |
1 can (15oz) pumpkin |
frosting |
1-1/2 sticks butter, softened |
1 pkg. (8oz) cream cheese, softened |
2 tsp. vanilla |
3-1/2 cups powdered sugar |
(the frosting ingredients were doubled by my mother years ago, i'm assuming the original amount didn't cover it to her liking, thought i'd throw this in, i've had a few people ask me.) |
Directions:
1. BARS: 2. Preheat oven to 350 degrees. 3. Combine all the BAR ingredients in a large bowl & mix until combined. 4. Bake in a greased 11x15 pan for 45 minutes or until a toothpick inserted near the center comes out clean. 5. Cool completely. 6. FROSTING: 7. Cream butter & cream cheese together in a large bowl. 8. Add vanilla & powdered sugar, mix till smooth. 9. If it seems stiff or not spreadable add a little bit of milk. 10. Spread over cooled pumpkin bars. |
