Pumpkin Bars With Cream Cheese Frosting |

I've been altering this recipe for years till now it's exactly how I want it. I use homemade pumpkin puree which is similar to the pumpkin in the can. Ingredients:
3/4 cup sugar |
2 large eggs |
16 ounces pumpkin |
1/2 cup canola oil |
2 cups flour |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon cinnamon |
1/4 teaspoon salt |
4 ounces cream cheese, softened |
1 teaspoon vanilla |
1/4 cup butter, room temp |
2 cups powdered sugar |
1 -2 teaspoon light cream |
Directions:
1. Mix the sugar, eggs, oil and pumpkin; beat with electric mixer several minutes. Add the remaining cake ingredients until well combined. 2. Bake in a lightly greased 9x13 inch pan at 325 degrees F for 25-30 minutes till toothpick comes out clean. Cool. 3. Frosting: Mix the cream cheese, vanilla and butter until smooth. Slowly add the powdered sugar and enough cream for spreading consistency. |
