Pumpkin Bars - Can Be Made Gluten Free |

You may want to doulble recipe -they will be gone in no time! They have a slight spice flavor and are just so delicious. These can easily be made gluten free with only changing the flour - any gluten free flour works - your guests will never know. Read more . Recipe is usually requested! Ingredients:
1 cup flour |
2/3 cup sugar |
1 1/4 teaspoons baking powder (gluten free - check - most are ok) |
1 teaspoon cinnamon |
1/8 teaspoon salt |
1/2 teaspoon baking soda |
1/8 teaspoon ground cloves |
1 tablespoon mayonaise (gluten free - use hellman's) |
1 cup pumpkin |
3 egg whites slighly beaten |
1/4 cup plus 1 tablespoon corn oil |
1/4 cup water |
cream cheese frosting |
2 cups confection sugar |
1/4 cup soft butter |
3 oz. softened cream cheese |
3/4 teaspoon vanilla |
Directions:
1. Preheat oven 350 F and spray an 8 x12 pan with non - stick spray (gluten free check spray). Sift together the flour mixture, sugar, baking powder, cinnamon, salt, baking soda and cloves. 2. Stir in the mayonaise, pumpkin, egg whites, corn oil, and water till thoroughly combined. 3. Spread in the oiled pan. Bake 20 minutes or till a toothpick inserted in the center comes out clean. Cool in the pan on a wire rack. 4. Cream cheese frosting: combine 1/4 cup butter, cream cheese and vanilla in mixer/blend - slowly and confectioner sugar and mix until well blended. 5. Spread cream cheese frosting ontop of cooled pumpkin bars. 6. Refrigerate to keep moist and fresh. |
