If you need to have a lot of bars, this fills a cookie sheet and is so easy. The receipe calls for a cream cheese frosing which is good, but I most always put a butter frosting on it. Either way, they don't last long. Ingredients:
4 eggs |
1 2/3 cups sugar |
1 cup oil |
1 (16 ounce) can pumpkin |
2 cups flour |
2 teaspoons baking powder |
2 teaspoons cinnamon |
1 teaspoon salt |
1 teaspoon baking soda |
1 (3 ounce) package cream cheese |
1/2 cup butter |
1 teaspoon vanilla |
2 cups confectioners' sugar |
Directions:
1. Beat the eggs, sugar, oil, and pumpkin till light and fluffy. 2. Add the rest to the above. 3. Mix well. 4. Pour into a 10x15x1 ungreased cookie sheet. 5. Bake350 degrees for 25-30 minute. 6. Cool and frost. 7. FROSTING: Mix all the ingredients together till fluffy and frost. |
