From Gooseberry Patch Old-Fashioned Country Cookies. Ingredients:
1/2 cup butter, softened |
1 cup sugar |
1 cup brown sugar |
1 lb canned pumpkin |
2 teaspoons vanilla |
4 eggs |
1 1/2 cups flour |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/4 teaspoon salt |
2 1/2 teaspoons pumpkin pie spice |
1 cup raisins |
1/2 cup chopped nuts |
4 ounces softened cream cheese |
1 teaspoon vanilla |
1/4 teaspoon salt |
4 cups powdered sugar |
1/3 cup milk |
Directions:
1. In a mixing bowl, stir together the butter, sugars, pumpkin, vanilla, and eggs; beat well. 2. Stir in remaining ingredients. 3. Pour into a greased jelly roll pan. 4. Bake in a 350° oven for 20-25 minutes or until top springs back when touched. 5. Let cool. 6. To make cream cheese frosting: beat all ingredients together. 7. Frost cooled pumpkin layer; let cool completely and cut into bars. 8. Number of bars depends on how big or small you cut them. |
