This recipe was in a box of loose recipes I'd cut out of magazines and newspapers. I'm posting it here so it won't get lost. UPDATE: I made these and they are delicious. I wasn't sure how pumpkin and applesauce would taste together. The predominate flavor to me was the molasses. I used all white flour and butter. The texture is more like a cake than a square. I did cream the butter, sugar, molasses, brown sugar, applesauce, eggs and pumpkin before adding the dry ingredients. Ingredients:
1 cup sugar |
1 cup butter, softened or 1 cup soft margarine |
3/4 cup molasses |
1/2 cup brown sugar |
3 cups flour (can be a mixture of ww and white) |
2 teaspoons baking soda |
3/4 teaspoon cinnamon |
1/2 teaspoon salt |
1/4 teaspoon clove |
1 cup pumpkin |
1 cup applesauce |
2 eggs, beaten |
Directions:
1. In a mixing bowl combine all of ingredients till well blended,then beat 3 minutes more. 2. Spoon into a greased 15 X10 jelly roll pan. 3. Bake in 350° oven for 30-35 minutes. 4. Cool pan in wire rack. 5. Cut into 2 1/2 inch squares. 6. Makes about 2 dozen. |
