This very refreshing salad is easy and fast to make! The taste of the raw pumpkin is a nice change from the usual pumpkin soup or pie. Ingredients:
3 tablespoons raisins |
2 tart apples, peeled and shredded |
1 cup shredded pumpkin |
2 teaspoons lemon juice |
salt and pepper to taste |
Directions:
1. Place the raisins in a small dish and cover with hot water. Allow to stand for 30 minutes. 2. Once the raisins are plump, drain and place into a mixing bowl with the apple and pumpkin. Pour in the lemon juice and toss to coat. Season to taste with salt and pepper, and serve immediately. |
