Moist fall breakfast muffins! Ingredients:
1 cup pumpkin |
1/2 cup applesauce |
1/4 cup sugar |
2 eggs |
1 tsp vanilla |
3/4 cup whole wheat flour |
3/4 cup all purpose flour |
1/2 tsp baking soda |
1/2 tsp baking powder |
1/2 tsp salt |
1 1/2 tsp cinnamon |
1/2 tsp nutmeg |
1/2 tsp allspice |
3 tablespoon raisins |
Directions:
1. Beat eggs, and add all wet ingredients to the mixture 2. Sift together dry ingredients. 3. Combine wet and dry ingredients, and add raisins. 4. Spoon into greased or no-stick muffin pans. 5. Bake at 350 until golden brown on top, approximately 12-14 minutes. |
