Mmmm... Autumn! Ingredients:
3 cups all-purpose flour |
1/2 teaspoon salt |
2 teaspoons baking soda |
1 teaspoon cinnamon |
1/2 teaspoon ground cloves |
1/4 teaspoon ground allspice |
1 (14 1/2 ounce) can pumpkin |
3/4 cup vegetable oil |
2 cups sugar |
4 eggs, lightly beaten |
2 cooking apples, peeled and chopped |
3/4 cup chopped pecans |
confectioners' sugar (to sprinkle on top) |
Directions:
1. Preheat oven to 350°F. 2. Sift together flour, salt, baking soda, cinnamon, cloves and allspice. Set aside. 3. In a large bowl, soften pumpkin with back of a wooden spoon. Mix in oil and blend well. Mix in sugar. Add eggs, a little at a time, stirring until combined. 4. Add flour mixture to wet ingredients slowly, stirring with a wooden spoon to blend well. Fold in apples and pecans. 5. Divide batter between two buttered and floured loaf pans. Bake in preheated 350° F oven for 50 - 60 minutes, or until a tester comes out clean. 6. Cool in pans for 30 minutes. Remove, and let cool completely on wire racks. |
