a Good Warmer for a wintry day. Good when topped with some Parmesan cheese. Ingredients:
3 cups cooked and pureed or canned pumpkin |
1 large leek washed and sliced to 1/8 of inch |
2 tbs butter |
1 tbs olive oil |
1/2 cup white wine |
2-3 cups chicken stock |
salt to taste |
1 cup milk or cream |
1/2 tsp cumin |
1 tsp cinnamon |
1 tsp mrs dash seasoning |
2 tbs honey |
Directions:
1. Saute the leeks in butter and olive oil for about 5 mins, until soft. 2. Add the wine and 1 cup stock,cook for about 10-15 mins,the leeks should be cooked and not tough to bite. 3. Stir in the pumpkin puree and add remaiming stock to the consistency you like. Simmer over low heat 10 mins. 4. Stir in the milk or cream. 5. Season to taste and add the honey making sure its well-blended. 6. Serve and top with cheese if liked. |
