This yummy soup would be wonderful with some crusty bread. Ingredients:
1 (15 oz.) can of pumpkin puree |
4 peeled, cored and chopped macintosh apples |
4 c. of chicken broth |
1 c. of water |
1 tsp. of white sugar |
1 tbsp. of butter |
1 finally chopped onion |
2 cloves of crushed garlic |
1 tbsp. of curry powder |
1 tsp. of ground cumin |
Directions:
1. First you want to add some butter to a large pan over medium flame. 2. Saute your onion, garlic, curry, and cumin unitl onion is soft. 3. Now you can add in your apples, pumpkin, broth, water, and sugar. 4. You want to this often, letting boil. 5. Cover this with a lid and let simmer approx. 25 min. 6. Next you want to puree the soup in a blender until creamy. 7. Pur soup back into the hot pot and reheat this. 8. Ladle up and serve! |
