Pumpkin and Chickpea Stew |

this stew will warm you up in those cold winter days. Ingredients:
1 lb pumpkin, cubed |
1/2 lb tomato |
1 bay leaf |
8 garlic cloves, grilled |
1 onion, chopped |
1 lb chickpeas (soaked overnight) |
1/4 pint olive oil |
2 large potatoes, cubed |
1/2 green pepper, sliced |
1/2 red pepper, sliced |
oregano |
thyme |
parsley |
1 pint vegetable stock |
Directions:
1. put everything into a casserole, add the stock, adding more water if necessary to cover, and boil for approx one hour. 2. lower the heat and keep boiling for another half an hour. |
