Pulled Seitan BBQ Sandwich

Use your favorite coleslaw for garnish. From Veg Times May/June 07
Ingredients:
2 tablespoons olive oil
1 small onion, chopped
1/4 cup garlic clove, minced
15 ounces tomato sauce
1 tablespoon horseradish
2 teaspoons molasses
2 teaspoons cider vinegar
1 teaspoon lemon zest
1/2 cup water
16 ounces seitan, shredded
6 sandwich buns
hot sauce, to taste
Directions:
1. Heat oil over med heat and add onion then saute 7 minutes. Add the garlic and cook one minute more.
2. Stir in the sauce and cook 3 minutes then add horseradish, molasses, vinegar, lemon zest and 1/2 cup water. Simmer over low heat for 30 minutes. Stir occasionally.
3. Fold in Seitan. Then fill buns with BBQ and top with coleslaw if you like.
4. Serve with hot sauce on the side.
