Pulled Pork The Recipe I Would Never Share |

This is the pulled pork we have served for 18 years and I said I would never share the recipe. But as my wife says never say never. I hope you all enjoy it. Ingredients:
1 pork but 8-10 lbs |
for rub |
1 c. paprika |
2t salt |
1/4 cup brown sugar |
1t garlic powder |
1t onion powder |
1 t chili powder |
1t dried mustard |
2t cumin |
1/2 t or more cayene |
course black pepper |
1 /2 teaspoon cinnamon |
pinch of nutmeg |
1 meat injector |
for the injection |
1 cup cider vinegar |
1/2 cup hot sauce |
1/2 stick of butter |
1/4 cup brown sugar |
black pepper |
if you plan on roasting this in the oven add |
1 -2 t liquid smoke |
Directions:
1. heat injector ingredients in a sauce pan till sugar melts 2. mix all rub ingredients in a bowl 3. inject the but with the sauce in several different spots 4. rub your butt with the spices. 5. now if you are useing a smoker have it heated to 225-250 degrees 6. if using an oven prehear to 225 7. let butt sit for 2 hours 8. if using the smoker smoke for 10 hours replenishing you fire as needed 9. if using the oven put in roaster and let go for 10-12 hours 10. make a mop of half cider vinegar,half water with a little garlic and black pepper in a spray bottle 11. spray butt every hour or so to keep it moist 12. when butt reaches 185 degrees on an instant read thermometer remove from heat wrap in in foil and let sit for at least an hour 13. then pull away and serve I like to serve with a good hard roll 14. have different sauces on the side so your guest can choose and of course pickles and coleslaw. 15. I know it seems like a lot of effort but believe me it is worth every minute of it. |
