This one comes from Quick Fix Meals with Robin Miller. I omitted the potatoes because I don't use this as a meal as much as just sandwiches. Ingredients:
1 1/2-2 lbs. pork tenderloin |
2 onions, sliced |
5-6 cloves of garlic, minced |
1/2 c. ketchup |
2 tb. soy sauce |
3 tb. red wine vinegar |
2 tb. brown sugar |
1 tsp. dijon mustard |
salt and pepper to taste |
Directions:
1. Line the bottom of a 3 1/2 - 4 qt. crock pot with the sliced onions. 2. Place the pork loin on top. 3. Sprinkle the minced garlic on top of the meat. 4. In a small bowl, mix the rest of the ingredients. 5. Pour mixture over meat and veggies. 6. Cover and cook on low for 10-12 hours. 7. When finished, remove meat to a large bowl or other container and using two forks, pull the pork apart. 8. Serve on large buns with your favorite BBQ sauce. |
