I lost this recipe for awhile, and I tried other salmon chowders but they were never quite as good as this one. I've been making this since high school, and it's a recipe I've made multiple times (which is unusual for me). Ingredients:
1/2 cup chopped celery |
1/2 cup chopped onion |
1/2 cup chopped bell pepper |
1 garlic clove, minced |
3 tablespoons butter |
1 cup chopped potato |
2 cups chicken broth |
1 1/2 teaspoons salt |
1 cup flaked cooked salmon |
17 ounces cream-style corn |
13 ounces evaporated milk |
1/2 teaspoon pepper |
1/2 teaspoon dill weed |
Directions:
1. In large pot saute celery, onion, bell pepper, and garlic in butter. 2. Add potatoes, carrots, broth, and seasonings. 3. Simmer for 20 minutes. 4. Stir in salmon, corn, and evaporated milk. 5. Simmer for 10 minutes or until heated through. |
