Messy but delicious quick fix. Ingredients:
1/2 pound lean ground beef |
1 tsp. onion flakes |
1/4 cup kidney beans |
1/4 cup enchilada sauce |
1/2 cup puréed canned tomatoes |
2 spinach tortilla 8 inch diameter |
leafy lettuce, two large leaves |
1/4 cup shredded cheese |
small tomato, wedged for garnish |
black olives, optional |

Directions:
1. Cook ground beef over medium heat until done & drain. 2. Put tortillas in oven, then preheat to 275. Letting them remain there as you.. 3. Return drained meat to pan, adding onion, beans, sauce, puréed tomatoes, and heating through...reducing liquid by about 1/3 4. Remove now puffy tortillas to serving plate and top with lettuce leaf, meat mixture, tomato wedges, black olives, cheese. 5. Serve with Salsa on the side. |
