Puffed Potatoes & Sausage |

This is a lovely combination of flavors. I have used leftover mashed potatoes also. Very kid friendly. Ingredients:
1/4 cup green onion, with tops sliced |
2 tablespoons butter |
3 medium potatoes, peeled and cubed |
1 cup american cheese, shredded |
3 egg yolks |
1/3 cup milk |
1/2 teaspoon salt |
3 stiffly beaten egg whites |
1 (8 ounce) package brown-and-serve sausage links |
Directions:
1. Cook onion in butter till tender but not brown. 2. Cook potatoes in boiling salted water till tender, about 10 minutes; drain and mash (about 2 cups mashed). 3. Beat in cooked onion and cheese. 4. Beat together egg yolks, milk and salt; blend into potato mixture. 5. Fold in beaten egg whites. 6. Turn into a 2-qt. casserole. 7. Arrange sausage links over potato mixture. 8. Bake, uncovered, at 375 till set, about 45 minutes. |
