adapted from Gale Gand's Just a Bite cookbook...this is a chewy moist fruit and nut bar...which bakes up with a crackly brown sugar crust... Ingredients:
4 large eggs |
2 1/4 cups light brown sugar, packed |
1 cup all-purpose flour |
1 teaspoon salt |
1 teaspoon vanilla extract |
1/2 cup prune, pitted, quartered |
3/4 cup pecan halves |
Directions:
1. Butter a 9x13 pan and lightly dust with flour. Set aside. 2. Preheat oven to 325*. 3. Beat the eggs until light and fluffy.in a mixer fitted with a whisk attachment.or you can use a hand mixer. 4. Add the granulated sugar and mix well. 5. Add the flour, salt and vanilla and mix until smooth. 6. Stir in the prunes by hand. 7. Spread the pecans in a single layer in the prepared pan. 8. Pour the batter over the pecans. 9. Bake until the center feels set and a top crust forms - about 35-40 minutes. 10. Let cool in pan on wire rack until room temperature. 11. Use a serrated knife with a sharp point to cut into 1 1/2 squares, wiping your knife clean often. |
