Prune cake with butterscotch glaze. Ingredients:
2 c. sifted flour |
1 tsp. baking sida |
1/4 tsp. salt |
1 tbsp. cinnamon |
1 tbsp. nutmeg |
1 tbsp. allspice |
1 c. cooking oil |
1 1/2 c. sugar |
3 eggs |
1 tsp. vanilla |
1 c. buttermilk |
1 1/2 c. coarsely cut cooked anddrained prunes |
1 c. chopped nuts |
1 c. raisins |
Directions:
1. Mix dry ingredients-set aside. 2. In a large bowl mix oil and sugar-add eggs one at a time, beating well. 3. Stir in vanilla, and add dry ingredients alternately with buttermilk about 1/2 at a time. 4. Stir in prunes, nuts, and raisins. 5. Pour into ungreased 9 inch tube pan. 6. Bake at 350 about 1 hour, or until cake tester comes out clean. 7. About 20 minutes before cake is done, prepare glaze. 8. ==================================================== 9. Butterscotch Glaze for Prune Cake 10. 1 c. brown sugar 11. 1/2 c. buttermilk 12. 1/2 stick butter 13. 1/4 c. light corn syrup 14. 1/2 tsp. baking soda 15. 1/2 tsp. vanilla 16. In 3 quart saucepan mix all ingredients over medium heat and bring to a full boil. 17. Stir occasionally, boil 10 minutes. 18. Remove cake from oven leaving in pan. 19. Pour hot sauce over cake immediately. 20. Allow cake to cool completely in pan before removing. |
