PRUNE BANANA ROLL This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Crawford Estate in Quinlan, Texas in 1982. The notation on this card indicates this came from a Farmers Almanac dated 1912. Ingredients:

1-1/4 cups cooked prunes |
1 cup sliced banana |
3 tablespoons powdered sugar |

3 eggs |
1/4 teaspoon salt |
3/4 cup sugar |
5 tablespoons cold water |
2 cups flour |
1-1/2 teaspoons baking powder |
1 teaspoon lemon extract |
Directions:
1. Pit prunes and cut into small pieces then add banana and powdered sugar and mix thoroughly. 2. Add salt to the eggs and beat until very light. 3. Mix in sugar then add water alternately with flour sifted with the baking powder. 4. Add flavoring and mix thoroughly. 5. Pour into a greased shallow pan and bake 20 minutes at 425. 6. Turn out on damp cloth and roll it up then unroll and spread with filling. 7. Roll again and remove from damp cloth. 8. Spread top with powdered sugar. 9. Note: Vary this by mixing cooked apricots and walnuts with the prunes, or chopped dried dates, pecans and prunes. |
