An easy topping for pancakes or a simple and elegant dessert.
Ingredients:
8 pitted prunes
8 dried apricots
1/4 c plain yogurt
Directions:
1. In a small bowl, soak the prunes and apricots in water or fruit juice to cover, for an hour or overnight. When the fruit is softened, drain and puree in a blender or food .processor until smooth. Add the yogurt and blend until smooth.
