Provençale Breakfast Toast!

These small open-faced sandwiches, or tartines, don't necessarily have to be eaten for breakfast, but they fit nicely as a late brunch! They have a strong tomato flavour, are very filling and healthy to boot. You could replace the bread with a toasted whole grain bagel and the pesto with cream cheese for something else! Read more !
Ingredients:
3-4 slices of whole grain bread
salt-free butter
tomato pesto
zucchini, sliced, boiled and drained
sun-dried tomatoes blanched in boiling water and drained
grated mozzarella or swiss cheese
Directions:
1. Toast the bread lightly, then butter
2. Lightly spread some tomato pesto
3. Stack the zucchini and sun-dried tomatoes on each piece of toast to your liking, cover with grated cheese
4. Let broil on MED or HIGH for 1-2 minutes or until cheese is melted and just starting to turn golden brown (be sure not to burn the bread though!)
5. ... Unless you like burnt toast :)
6. Garnish with sliced carrot, fresh parsley and green onion, serve hot
