This comes together super fast and best of all you use only one pan! From Mr. Food. Ingredients:
1 tablespoon vegetable oil |
1 (1 lb) beef sirloin steak, cut into 1 inch cubes |
1 onion, chopped |
3 cloves garlic, minced |
3 yellow squash, cut unto 1 inch chunks |
1 (15 ounce) can great northern beans, rinsed and drained |
1 (14 1/2 ounce) can diced tomatoes |
1/4 teaspoon black pepper |
2 cups loosely packed fresh spinach leaves |
1 tablespoon grated parmesan cheese (or more) |
Directions:
1. In a large skillet, heat oil over high heat. 2. Add steak, onion, and garlic. 3. Saute 5 minutes, or until meat is browned, stirring frequently. 4. Add yellow squash and saute 3 to 4 minutes, stirring frequently. 5. Add beans, tomatoes, and black pepper, mix well. 6. Cook 3 to 4 minutes, or until heated through. 7. Just beore serving, stir in spinach and cook 2 to 3 minutes, or until spinach wilts. 8. Sprinkle with Paresan cheese and serve. |
